Pan-fried potatoes with rosemary
I think everyone likes potatoes. You never get tired of them. Do you agree with me?
These roasted and golden brown potatoes with rosemary and garlic, which gives them extra flavor, are absolutely irresistible.
You can serve them as a side dish to all kinds of dishes, both meat and fish.
It is easy to follow this recipe and I promise you that you will get a successful and tasty result.
There are many different types of potatoes and the best type of potato to go with this dish are firm potatoes or fresh potatoes, because they are firmer in texture than floury potatoes.
I used pearl potatoes, so I didn't have to cut them in half. If you are using slightly larger potatoes, I recommend cutting them in half.

Ingredients for 4 persons:
- 700 g small potatoes, preferably new (pearl potatoes or morene potatoes)
- 2 sprigs rosemary
- 2 garlic cloves
- 2 tablespoon of butter
- 4 tbsp extra virgin olive oil
- salt and freshly ground black pepper
This is what you do:
Brush the potatoes before cooking.
Place the potatoes in a saucepan, pour in cold water until it covers and add a little salt.
Bring to the boil, reduce the heat and simmer for 5 minutes.
Remove the potatoes with a slotted spoon and let the water drain.
Peel the garlic cloves. Rinse and dry the rosemary.
Heat the oil and butter in a large frying pan.
Add the rosemary and garlic.
Add the potatoes, fold together and put the lid on.
Let it simmer until the potatoes are almost done. Remove the lid and let the potatoes fry until they are golden brown and tender.
Remove the garlic cloves and rosemary and sprinkle with salt and pepper and serve.
Tip: it is best to use flaked salt, type Maldon.
