Oven-baked sea bass with potatoes and lemon (Branzino con patate e limone)

Ingredients for 2 persons:
- 1 sea bass (800 g) or 2 (400 g each)
- 2 large baking potatoes
- 6 sprigs fresh thyme
- 1 lemon
- salt and freshly ground pepper
- 3 tbsp extra virgin olive oil
This is what you do:
Preheat the oven to 190 degrees.
Peel and wash the potatoes and cut them into wedges.
Boil the potatoes in lightly salted water for approx. 5 minutes.
Let the water drain.
Rinse the sea bass well under running cold water. The mucous membrane in the abdomen can easily be washed away.
Dry the fish with kitchen paper.
Rinse the thyme and shake off the water. Pick the leaves off the twigs.
Wash and cut the lemon into thick slices.
Stuff the fish with a slice of lemon, some thyme leaves, salt and pepper.
Place the potato boats in an ovenproof dish together with the fish. Pour the olive oil over the potatoes and fish, add the lemon slices, the thyme, and season with salt and pepper.
Fry the fish in the middle of the oven for approx. 30-35 minutes. The cooking time depends on the size of the fish. (If you fry 2 fish of 400 g, 20-25 minutes.)
