Acciughe al verde. Anchovies in green sauce, on pie Acciughe al verde. Anchiosis in green sauce, in the Piedmontese dialect "anciue al verd", is a typical starter in the regional Piedmontese cuisine. The small fish are covered in a delicious green sauce consisting of parsley leaves, garlic and red chili. This is a simple recipe of modest origin with an intense and delicious taste. Although there is no sea in Piedmont, anchovies are without a doubt the most widely used fish in Piedmontese recipes. It is small with a lot of meat and with a distinctive taste.
