Panini with concentrate of pomodoro👩‍🍳 På Panini con concentrrato di pomodoro👩‍🍳 At an Italian buffet you will probably find different types of small rolls with different fillings: with salami, with mortadella, with ham, etc. I think these rolls are perfect with tomato, mozzarella, basil and a few drops of an extra good olive oil. Have you got the urge to make them?
Pasta with truffle. «Taglierini» or «tajarin Pasta with truffle. "Taglierini" or "tajarin" in the Piedmontese dialect, is a pasta form of fresh egg pasta, which is typical of the culinary tradition of the Langhe. There is an area in Piedmont that is very famous for its wines e.g. Nebbiolo, Arneis Barbaresco etc. and for its beautiful views. Tajarins are long, thin and yellow in color, thanks to the many egg yolks in the dough. The traditional recipe consists of 1 kg of wheat flour and 40 egg yolks. We find the first evidence of this pasta as early as the fifteenth century. It was made for special occasions or holy days, given its wealth of eggs. We must remember that eggs were also a wealth in those old days.
